The mussel farming

The mussel farming: situated in Dolus d’Oléron, in the Charente Maritime Department is the heart of the most important and oldest center. Our company Les 2 Eauxsales mussels all around France.



The farming

it is at the beginning of spring that the mussels born. Some ropes are pulled horizontally in order to collect the spats
In June, the ropes are placed on the gate in wood for the development of the spats.
Then the ropes are coiled around the «Bouchot», that are the wooden pole, in July. The development of the mussel takes place during the winter and the spring after. We need one year to produce a mussel

The purification:

After the collect, the mussels are placed in «purification», there are placed into the ponds during a period of 12-24 hours. Then like every product intended for the human consumption, its quality are controlled in intern and by the organism specialise for this

The consumption

For the cooking, you need to use a large vessel in order to brew and obtain a homogeneous cooking. Put the mussels washed in the vessels and add a little liquid like (water, wine, etc.) Cover and bring to boiling. Leave bakes with the vapor few minutes, until the opened of the mussels.After stop the fire when each mussles are opened. The mussels can be enjoyed with different ways
